Caroline and I were in the Westminster area on Saturday and decided to stop by The Spotted Pig for some barbecue. The Spotted Pig is on Highway 11 a few miles north of I85 near the turn off to Chickasaw Point. The outside doesn’t look like much, but the interior is nicer than you might expect for a local joint. A large stone fireplace serves as the center piece for the large dining area and there is a handy wash basin for sticky fingers after your meal. Caroline had pulled pork with stew and fried okra, and I had the rib basket with stew and slaw. I thought the ribs were particularly good, especially with the hot barbecue sauce.
